Yellow tea isn't well known because it's a rare tea. This tea is grown in Moganshan, Deqing County, Huzhou City, Zhejiang Province, China. Young tea buds are used from the Mogan Heirloom Tea Bush. The tea goes through a process called Men Huang or 'sealing yellow'. This process includes pan frying at low temperature, slightly steaming the leaves, covering them which allows them to oxidize then slowly fermenting them. Due to the high expense of producing yellow teas it could not be sustained at local markets which resulted in techniques and a wealth of knowledge not being passed down. There are few yellow teas produced yet today on the market. Today there are only two or three tea masters that still know how to make Mogan Huangya, the region’s traditional type of yellow tea. Tea master Mrs.Wang is one of the only female tea masters that still makes traditional yellow tea.
